The trick to making Hojicha is to brew it with hot water

The biggest difference from sencha is that there is no need to cool the water.

Use hot water that has just come to a boil. The fragrant aroma that is the charm of Hojicha is enhanced when brewed with hot water.

Also, as mentioned above, because hojicha is roasted, it contains almost no tannins or caffeine, which are the source of bitterness and astringency. Even if you leave the remaining water in the teapot after brewing the first cup, it is not a problem as it is less likely to become astringent. Make a generous amount using hot water.

What to prepare (materials and tools)

・Teapot/clay pot・tea bowl・teaspoon・tea leaves・hot water・timer

・Tea leaves: 2 grams (1 teaspoon)
・Amount of hot water: 80cc
- Temperature: Approximately 90℃

Basic brewing method for Hojicha

  1. Brew the desired number of cups of tea leaves into the teapot. Unlike with sencha, the teapot does not need to be heated and no steam rises, so the tea leaves can be added directly from the spoon.
  2. Pour about 80cc of hot water (about 90℃) per person. The reason for using hot water is to bring out the aroma.
  3. Set a timer and let it steep for 30 seconds. When making the second infusion, let it steep for twice as long as the first infusion, about 1 minute.
  4. When the time is up, pour the tea in a circular motion so that the amount is evenly distributed. Even if some tea remains in the teapot, it is okay to leave it as it is, as it is less likely to become bitter, unlike sencha.
