Seaweed and chocolate: an unexpected combination linked by umami

The star of the dish is Yamamotoyama's roasted seaweed "Asakusa." Among all the seaweed harvested from the Ariake Sea in Kyushu, Asakusa has a particularly beautiful color and luster, a crisp yet smooth texture, and a rich flavor that spreads in your mouth. It has been powdered and combined with couverture chocolate. At first glance, seaweed and chocolate seem like a mismatch. However, by adding a touch of sake, the aroma of the seashore is suppressed, creating a well-balanced flavor of the high-quality seaweed and the sweetness of the chocolate.

The bottom layer of the white chocolate is topped with finely chopped candied oranges, allowing you to enjoy the multiple layers of flavor, as well as a refreshing taste of the rich chocolate terrine.

We use a generous amount of Yamamotoyama roasted seaweed "Asakusa." In order not to ruin the flavor of the seaweed, no wheat flour is used and each one is carefully handmade by our pastry chefs using a high-quality truffle ganache method.

■Taste that makes the most of the flavor of seaweed
In order to retain the flavor of the seaweed while suppressing the smell of the seashore, the chocolate used is Valrhona couverture chocolate from France, with an essence of sake. You can enjoy the original texture and flavor of the seaweed while also adding a refreshing fruity accent of minced orange, allowing you to enjoy the change in taste over and over again.
