Nori can be broadly categorized into three types based on the color: black, green, and purple.
First, there is "purple-red seaweed." This is seaweed that has withered. It has lost its freshness and flavor, so it is no longer tasty to eat. You will rarely see it in supermarkets.
Next is "green seaweed."
This green color is evidence that the seaweed is not fully grown. You may see this green color when purchasing cheap seaweed at supermarkets, but green seaweed often has a weak flavor and a poor texture.
For this reason, it is not recommended if you want to enjoy the original taste of seaweed, such as in sushi or nori rolls.
It is generally used as an ingredient in Korean seaweed or seasoned seaweed, or as a topping for ramen, where it does not interfere with the flavor of other ingredients.
Finally, there is "black seaweed," which is generally considered to be delicious.
Nori turns black during the drying and roasting process, and deep black nori is considered the best quality.
You can choose nori that is dark black, shiny, and has a lacquered appearance, and is flavorful and delicious.
